We wanted something that smelled like the first cold morning of autumn on the coast: sharp, clean and a little bit green. It took forty-one attempts.
Yuzu is a Japanese citrus that sits somewhere between grapefruit and mandarin, with a bitterness that keeps it from going sweet. We paired it with steamed white tea leaves, which add a soft, almost milky mid-note, and finished with hinoki and pale blonde woods so it settles rather than disappears.
